I don’t know about you, but I hate planning lunch. Audrey is the world’s pickiest lunch eater. She doesn’t like whole wheat bread, and I refuse to buy white, so she won’t eat sandwiches. Every day packing lunch for her is a struggle.
The younger girls are not nearly as picky. But even so, I get tired of the same old lunch standbys and sometimes I just don’t want to eat “kid” food.
Enter my special Fried Rice!
All you need is some leftover rice, whatever frozen veggies you like, an egg, and stuff from the spice cabinet.
Heat up some sesame oil in a skillet (gives it a nice flavor, but if you don’t have any, just skip it). Scramble the egg and slide it to the edge of the pan. Sprinkle the egg with a little ground ginger and a tiny bit of garlic powder.
Dump in some frozen veggies. I like bell peppers, onions (comes in a bag together) and edamame, but anything would work. When the veggies are pretty much done, dump in the cold rice. Add some soy sauce and heat through. Done!
You could also switch this up with whatever leftovers you had. I am thinking of Mexican rice with some taco meat, beans, tomatoes…top with salsa and cheese. Yum!
